Most of us can’t get through our day without a steaming cup of tea to fuel us. Chai is an inherent part of the Indian culture, be it in a social setting or professional meetings. In fact, the tea industry is one of the oldest organized industries in India, with our country being the second largest producer of tea in the world.
Globalisation and a growing awareness of health and wellness issues have led to consumers becoming increasingly conscious about their food habits, and this is also influencing the ages-old tea drinking culture in India. More and more people are switching to alternate forms of tea, such as herbal teas and green tea due to their health benefits.
Popular in Japan and China, green tea is slowly gaining popularity in the rest of the world because of its health benefits, and India is not far behind. It surprises many people to learn that green tea and black tea originate from the same exact plant species—Camellia sinensis, native to both China and India.
So how is green tea different from the more commonly known and available black tea? It’s the variety of tea plant and how the tea leaves are processed that defines how green tea becomes “green” and black tea becomes “black”.
Tea leaves are harvested from the plant and quickly heated—by pan-firing or steaming—and dried to prevent too much oxidation from occurring that turns the green leaves brown and alter their fresh-picked flavour. A brewed green tea is typically green, yellow or light brown in colour, and only mildly astringent in flavour.
By contrast, black tea leaves are harvested and allowed to fully oxidize before they are heat-processed and dried. During oxidation, oxygen interacts with the tea plant’s cell walls, turning the leaves the rich dark brown to black colour that black tea is famous for, and significantly alters their flavour profile.
It is due to this difference in processing that green tea retains the maximum antioxidants and polyphenols that are responsible for its many health benefits. Enjoyed hot or cold, or even in powdered form, green tea is fast emerging as a superfood, and is hailed for its powerful antioxidants and health benefits.
The list of benefits derived from drinking green tea runs long. In fact, in China, green tea has been used as a medicine for thousands of years. It is believed to help with weight loss, prevention of cancer, heart disease, diabetes, reducing bad cholesterol, blood pressure, soothing throat infections, and even preventing signs of ageing.
